Walnut-shaped butter cookies filled with caramel known as 'dulce de leche.'
Ingredients:
  • 0.5 cup butter, softened
  • 1 egg, lightly beaten
  • 0.5 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 0.25 teaspoon salt
  • 1 (13.4 ounce) can dulce de leche
Instructions:
  • Using an electric mixer, whip butter and sugar until fluffy. Blend in egg and vanilla extract. Gently incorporate flour and salt; avoid overmixing to keep dough soft. Cover with plastic wrap and refrigerate for 30 to 60 minutes, or overnight if desired.
  • Preheat your oven to 375°F (190°C).
  • Take a teaspoonful of the chilled dough and press it into each walnut-shaped mold, covering the bottom and sides. Arrange the molds on a baking sheet.
  • Bake until edges turn golden, 12 to 18 minutes. Allow to cool briefly, tap mold to release cookies, then cool until easily handled.
  • Spread a generous layer of dulce de leche on the bottom of each cookie, then carefully press the halves together to create a delicious sandwich.
