Sweet cinnamon apples baked under a honey buttermilk biscuit crust - a delicious diabetic-friendly dessert.
Ingredients:
  • 4 apples - peeled, cored and sliced
  • 1 cup water
  • 2 teaspoons ground cinnamon
  • 2 tablespoons cornstarch
  • 0.25 cup fructose (fruit sugar)
  • 1 cup whole wheat pastry flour
  • 1 teaspoon baking powder
  • 0.25 cup canola oil
  • 1 tablespoon honey
  • 0.5 cup lowfat buttermilk
Instructions:
  • Preheat your oven to 375°F (190°C).
  • In a large saucepan over medium heat, mix together the apples, water, cinnamon, cornstarch, and fructose until the apples are soft and the mixture thickens, approximately 10 minutes.
  • Transfer the apple mixture into a casserole dish.
  • Create biscuit dough by mixing whole-wheat pastry flour and baking powder. Incorporate oil and stir thoroughly. Then, blend in honey and buttermilk using a fork until flour mixture is moistened. If needed, add more milk.
  • Spoon tablespoons of biscuit dough over apples. Bake until biscuits turn golden brown, about 20 minutes. Serve warm.
