Family-friendly classic crepes with warm, sweet cinnamon apple filling.
Ingredients:
  • 0.25 teaspoon salt
  • 2 cups all-purpose flour
  • 0.25 cup vegetable oil
  • 0.5 teaspoon ground cinnamon
  • 4 Granny Smith apples, peeled and diced
  • 2 teaspoons cinnamon
  • 2 tablespoons water
  • 2 tablespoons cornstarch
  • 1 tablespoon water
  • 1.5 tablespoons milk
  • 8 teaspoons vegetable oil, divided
Instructions:
  • In a bowl, whip eggs and salt together. Slowly mix in flour and milk until fully combined. Beat in vegetable oil and cinnamon. Chill batter for at least 1 hour before using.
  • Combine fresh, crisp apples with sweet sugar, aromatic cinnamon, and a splash of water in a pot.
  • Combine cornstarch and 1 tablespoon of water in a small bowl, then add it to the apple mixture.
  • Thicken apple mixture over medium heat, stirring occasionally, for 8 to 10 minutes until it reaches a desired consistency. Keep it warm.
  • Gently blend 1 1/2 tablespoons of milk into the chilled batter using a whisk.
  • In a crepe or frying pan over medium heat, heat 1 teaspoon of vegetable oil. Pour 1/3 cup of batter into the hot oil and swirl the pan to cover the entire area. Cook for about 30 seconds until edges start curling, then flip and cook for another 30 seconds until lightly golden. Remove crepe from pan, add more oil, and repeat with the remaining batter.
  • Fill each delicate crepe with a generous amount of luscious apple filling, then elegantly fold over and present for a delightful serving.
