Warm Apple Compote

Delicious compote made with apples, raisins, and pecans - great for pork, chicken, or dessert.
Ingredients:
  • 0.25 cup unsalted butter
  • 0.5 cup pecans
  • 3 Granny Smith apples - peeled, cored, and chopped
  • 2 tablespoons white sugar
  • water
  • 0.5 cup golden raisins
  • 1 pinch salt
  • 1 tablespoon whiskey
  • 1 teaspoon vanilla extract
Instructions:
  • In a saucepan over medium heat, melt butter until bubbly. Add pecans and stir until fragrant and lightly toasted, about 2 to 3 minutes. Using a slotted spoon, transfer pecans to a bowl, leaving the butter in the pan. Cook apples in the delicious butter until they start to soften, around 2 minutes, then stir in sugar.
  • Combine water, raisins, and salt into the apple mixture, cooking at a gentle simmer until the raisins plump up, approximately 5 minutes. Stir in whiskey, vanilla extract, and toasted pecans.
