Warm brownie puddings with chocolate sauce

Wow your Christmas guests with decadent individual chocolate desserts.
Ingredients:
  • 220g good-quality dark chocolate
  • 125g unsalted butter
  • 4 eggs
  • 220g caster sugar
  • 20.00 ml Frangelico liqueur or amaretto
  • 75g plain flour
  • 2.00 gm baking powder
  • 65.00 gm good-quality cocoa powder
  • 125g good-quality white chocolate (or dark chocolate)
  • 185ml cream
Instructions:
  • Preheat your oven to 180°C and generously butter 6 muffin pan cavities.
  • Melt 120g of chocolate and the butter in a heatproof bowl over simmering water (ensuring the bowl doesn't touch the water), stirring until smooth. Take off the heat and let it cool slightly. Beat the eggs with electric beaters until foamy, then mix in the sugar until pale and thick. Slowly add the chocolate mixture, followed by the Frangelico or amaretto. Sift the flour, baking powder, and cocoa, then gently fold into the mixture. Pour into the muffin pan and bake for 25 minutes.
  • Melt the remaining 100g chocolate in a heatproof bowl and let it cool slightly. Line a baking sheet with parchment paper and spread the chocolate thinly onto it using a palette knife. Let it sit at room temperature for 5 minutes until almost set. Press a decorative leaf cutter gently into the chocolate to create indents. Chill until firm, then break the chocolate leaves away from the rest.
  • Prepare the sauce by placing the ingredients in a heatproof bowl and melting them until a thick sauce forms. Then, plate the puddings, drizzle with the warm sauce, and garnish with chocolate leaves.
