Ingredients:
  • Melted butter, for greasing
  • 60g (3 tbsp) butter, chopped
  • 20.00 gm cocoa powder
  • 80g (1/2 cup) pure icing sugar
  • 40.00 ml plain flour
  • 40g (1/3 cup) almond meal
  • 2 egg whites, at room temperature
  • Freshly brewed coffee, to serve
Instructions:
  • Preheat oven to 180°C. Lightly grease twelve 1 1/2 tablespoon mini muffin pans by brushing them with melted butter.
  • In a small saucepan, gently melt the butter over medium heat. Allow it to cool for 2-3 minutes before whisking in the cocoa until smooth.
  • First, sift icing sugar and flour into a medium bowl, then stir in almond meal. Mix in egg whites until just combined, followed by the cocoa mixture. Divide the cake mixture among greased pans and bake in a preheated oven for 12-15 minutes or until a skewer inserted in the center comes out clean. Allow the cakes to cool for 4 minutes before transferring to a wire rack. Serve the warm cakes with coffee.
