Tangy red potato salad with Dijon dressing - a perfect crowd-pleaser!
Ingredients:
  • 5 red potatoes
  • 0.5 cup reduced-fat mayonnaise
  • 2 tablespoons grated Parmesan cheese
  • 1.5 tablespoons Dijon mustard
  • 4 teaspoons cider vinegar
  • 0.5 teaspoon cayenne pepper
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon paprika
  • 0.5 red onion, thinly sliced
  • 2 green onions, chopped
Instructions:
  • Prepare all ingredients.
  • In a large pot, add potatoes and cover with salted water. Bring to a boil, then simmer covered on medium-low heat until tender, approximately 20 minutes. Drain and cube potatoes.
  • Combine the mayonnaise, Parmesan cheese, Dijon mustard, vinegar, cayenne pepper, salt, black pepper, and paprika in a large bowl and whisk until smooth.
  • Combine the potatoes, red onion, and green onions, tossing gently until mixed well.
