Whip up a zesty Frisée Salad topped with tangy vinaigrette and crunchy salami. Perfect fall side dish, ready in just 20 minutes.
Ingredients:
  • 1/4 cup extra-virgin olive oil
  • 6 oz kosher beef salami slices, cut into 1/4-inch strips
  • 1/2 medium red onion, sliced
  • 1 clove garlic, finely chopped
  • 1/3 cup plus 1 tablespoon sherry vinegar
  • 2 teaspoons coarse-grained mustard
  • 1/2 teaspoon kosher (coarse) salt
  • 1/4 teaspoon coarse ground black pepper
  • 4 bunches frisée, torn
  • 1 pint grape tomatoes, cut in half
Instructions:
  • Heat oil in a 10-inch skillet over medium heat. Cook salami strips for 5 to 10 minutes until crispy, stirring occasionally. Transfer crispy salami to paper towels to drain, and keep the flavorful oil in the skillet.
  • Sauté onion and garlic in the flavorful oil for 2 minutes, stirring occasionally. Add vinegar, mustard, salt, and pepper; cook for an additional 1 minute.
  • Place fresh frisée and ripe tomatoes in a large bowl. Drizzle with the tangy vinegar dressing, toss well to coat. Top with crunchy salami pieces. Serve right away.
