Delicious and unique BBQ side dishes that are easy to make!
Ingredients:
  • 2 large ripe peaches halved and stones removed
  • extra virgin olive oil
  • 2 frisée or endive lettuces dark outer leaves discarded, inner leaves washed and dried
  • Parmesan cheese freshly grated
  • 1 small bunch fresh mint smallest leaves picked
  • 55 g crumbly goat's cheese
  • 5 tablespoons extra virgin olive oil
  • 1 lemon
  • 1 tablespoon walnut oil
  • 20 g Parmesan cheese freshly grated
Instructions:
  • Prepare the dressing by blending goat’s cheese in a pestle and mortar with a pinch of sea salt and black pepper. Mix in olive oil and lemon juice, then add walnut oil and Parmesan, being careful not to overmix. Grill peaches on a hot griddle until nicely charred. Place grilled peaches on a platter or individual plates, drizzle with olive oil, and season with salt and pepper. Toss frisée or endive leaves in the goat's cheese dressing, ensuring they are evenly coated. Top the salad with grated Parmesan and serve alongside the peaches. Garnish with baby mint leaves and optionally sprinkle with warmed, crumbled walnuts. Pair with Parma ham, Spanish serrano ham, or speck for a delightful addition to the meal.
