Warm potato, egg, tuna and pea salad

Cozy up with a tasty potato, egg, tuna, and pea salad.
Ingredients:
  • 4 desiree potatoes, cut into 3cm chunks
  • 125.00 ml frozen peas, thawed
  • 3 green onions, sliced
  • 185g can tuna in spring water, drained, flaked
  • 50g spinach
  • 2 eggs, hard boiled, sliced
  • 61.88 gm low-fat mayonnaise
  • 40.00 ml low-fat yoghurt
  • 40.00 gm basil pesto
  • 1/2 lemon, juiced
Instructions:
  • Place potato in a large saucepan and cover with cold water. Bring to a boil over high heat, then simmer for 10 to 12 minutes until tender. Quickly add peas and cook for 30 seconds. Drain all ingredients.
  • Combine the potato, peas, green onion, and tuna in a large bowl, and mix well.
  • Combine creamy mayonnaise, tangy yogurt, flavorful pesto, zesty lemon juice, and a pinch of salt and pepper in a bowl and whisk until smooth to create a delectable basil mayonnaise.
  • Gently toss spinach into warm potato salad until leaves just wilt. Divide salad between plates, top with egg, spoon over mayonnaise, season with pepper, and serve.
