Ingredients:
  • 1kg baby coliban potatoes, quartered
  • Salt & freshly ground pepper
  • Olive oil spray
  • 3 chorizo, sliced crossways (see note)
  • 80g olive
  • 110g semi-dried tomato
  • 250.00 ml fresh continental parsley leaves
  • 18.20 gm extra virgin olive oil
  • 21.00 gm fresh lemon juice
  • 1 lemon, rind finely grated
Instructions:
  • Preheat oven to 200°C. Line a baking tray with non-stick baking paper. In a bowl, mix potatoes with oil, salt, and pepper. Spread in a single layer on the tray. Roast for 45 minutes until golden. Transfer to a large bowl.
  • Prepare the dressing by whisking all the ingredients together in a bowl. Season with salt and pepper to taste.
  • Coat a large frying pan with olive oil and heat over medium-high heat. Cook the chorizo for 2 minutes on each side until golden brown.
  • Combine the chorizo, pitted olives, semi-dried tomatoes, parsley, and dressing with the potatoes. Gently toss the ingredients together and serve promptly.
