Warm potato and onion salad

Enhance this classic side dish with a touch of cinnamon for added flavor depth.
Ingredients:
  • 2kg desiree potatoes, halved
  • 50g butter, chopped
  • 3 red onions, halved, thinly sliced
  • 3 tsp brown mustard seeds (see note)
  • 1 cinnamon stick
  • 125.00 ml white wine vinegar
  • 113.75 gm olive oil
  • 28.60 gm honey
  • 40.00 ml thyme leaves
Instructions:
  • In a large saucepan, submerge the potatoes in cold water and bring to a boil over medium-high heat. Let them boil uncovered for about 20 minutes until just tender. Drain the potatoes, cut them in half, and transfer to a large bowl.
  • In a large non-stick pan, gently melt butter over medium-low heat. Add onion, mustard seeds, and cinnamon. Sauté for 15-20 minutes until onion is golden and caramelized. In a bowl, whisk together vinegar, oil, honey, salt, and pepper.
  • Combine the onion mixture and thyme with the warm potatoes. Pour the dressing over and toss the potatoes until coated. Remove the cinnamon before serving.
