Elevate zucchini and basil in a warm salad, perfect as a side dish or part of an antipasto spread.
Ingredients:
  • 2 tablespoons extra-virgin olive oil, or more to taste
  • 2 zucchini, thinly sliced
  • 1 pinch salt and ground black pepper to taste
  • 2 tablespoons finely chopped fresh basil, or more to taste
Instructions:
  • Preheat the oven to 400°F (200°C) and generously grease 2 baking sheets with olive oil.
  • Toss thinly sliced zucchini with a drizzle of olive oil until evenly coated. Arrange zucchini slices in a single layer on baking sheets.
  • Roast the zucchini in a preheated oven until tender and golden-brown, about 20-25 minutes. Then, transfer to a bowl and let it cool slightly.
  • Season generously with salt and pepper, sprinkle in fresh basil, and gently mix everything together. Enjoy either warm or chilled.
