Watermelon, Mint and Lime Dessert Shooters

Create a delightful and easy-to-make summer dessert, perfect for serving in elegant shot or martini glasses.
Ingredients:
  • 2 tablespoons organic sugar
  • 2 tablespoons water
  • 1 tablespoon finely chopped fresh mint
  • 1 1/2 lb seedless watermelon, rind removed, cut into chunks
  • 1/2 to 1 tablespoon fresh lime juice
  • 1/2 teaspoon grated lime peel
Instructions:
  • In a small saucepan, gently warm sugar, water, and mint over medium heat for 3 to 4 minutes, stirring constantly until sugar completely dissolves. Take off the heat.
  • Blend fresh watermelon chunks with tangy lime juice and zest until perfectly smooth in a blender. Mix in the sweet sugar combination and blend once more for added sweetness.
  • Transfer the mixture into an 8-inch square pan and freeze for 1 to 2 hours, scraping with a fork every 30 minutes until fully frozen.
  • Divide mixture among 8 shot glasses for a stylish presentation. Enjoy!
