Easy watermelon mascarpone dessert.
Ingredients:
  • 1kg seedless watermelon, rind removed, cut into 1cm x 3cm pieces
  • 125g fresh raspberries
  • 10.00 gm caster sugar
  • 250g tub mascarpone cheese
  • 1/2 tsp vanilla bean paste
  • 16.00 gm brown sugar
Instructions:
  • In a bowl, combine watermelon and raspberries. Sprinkle with caster sugar and mix well. Let it sit for 20 minutes to release juices and create a delicate syrup.
  • Combine mascarpone, vanilla, and brown sugar in a small bowl until smooth. Serve alongside the watermelon mixture.
