Watermelon in orange syrup

Elevate watermelon with spiced syrup for a refreshing and elegant dessert. Perfect for entertaining.
Ingredients:
  • 1 large orange
  • 185ml (3/4 cup) water
  • 70g (1/3 cup) caster sugar
  • 1 tsp whole cloves
  • 1 tsp cardamom seeds
  • 1 cinnamon stick, broken in half
  • 800g seedless watermelon, peeled, thinly sliced
  • Greek-style natural yoghurt, to serve
Instructions:
  • Zest the orange using a zester, creating thin strips of rind. Alternatively, use a vegetable peeler to peel the rind, then carefully remove any white pith with a small sharp knife and cut the rind into very thin strips. Juice the orange and strain the juice into a jug, discarding the pulp.
  • Combine orange juice, orange rind, water, sugar, cloves, cardamom, and cinnamon stick in a saucepan over medium heat. Bring to a boil over high heat, then simmer for 8 minutes until reduced by half. Cool, strain into a jug, discard spices, and chill in the fridge.
  • Distribute watermelon into serving glasses, drizzle syrup on top, garnish with the reserved rind, and serve with yogurt.
