Watermelon Pops

Watermelon-inspired raspberry and cream cheese frozen pops with lime and chocolate chip "seeds".
Ingredients:
  • 1 cup sugar
  • 1 (3 ounce) package JELL-O Lime Flavor Gelatin
  • 2 cups boiling water, divided
  • Ice cubes
  • 1 cup cold water, divided
  • 1 (3 ounce) package JELL-O Strawberry Flavor Gelatin
  • 3 tablespoons miniature semi-sweet chocolate chips
  • 4 ounces PHILADELPHIA Cream Cheese, softened
  • 1.5 cups thawed COOL WHIP Whipped Topping
Instructions:
  • In a medium bowl, combine 1/3 cup sugar and lime gelatin mix. Pour in 1 cup boiling water and stir for 2 minutes until fully dissolved. Mix in enough ice to 1/2 cup cold water to make 3/4 cup. Stir until ice is melted. Refrigerate for 25 minutes.
  • Next, prepare the strawberry gelatin mix as in Step 1, skipping the refrigeration. Divide the mixture into 16 (3-oz.) paper cups and freeze for 20 minutes. Sprinkle 1/2 tsp. chocolate chips into each cup of gelatin.
  • In a medium bowl, use a mixer to blend the cream cheese and sugar until smooth. Gently fold in the COOL WHIP. Spread this creamy mixture over the set gelatin in cups.
  • Drizzle lime gelatin over the cream cheese mixture and carefully insert a wooden pop stick into the center of each cup. Place in the freezer for 3 hours or until set. Just before serving, gently remove the pops from the cups.
