Celebrate summer with a refreshing Watermelon Rosé Mimosa - blend watermelon and rosé for a fruity and thirst-quenching treat!
Ingredients:
  • For the watermelon juice:
  • 10 ounces watermelon cubes
  • For the watermelon mimosa:
  • 16 ounces sparkling rosé
  • 8 ounces watermelon juice
  • 2 ounces Meyer lemon juice, freshly squeezed or Limoncello, optional
  • To garnish:
  • Watermelon wedges for garnish
Instructions:
  • Create refreshing watermelon juice: Blend watermelon cubes in a blender or food processor until smooth, approximately 30-45 seconds.
  • Strain the juice through a fine mesh strainer or a nut milk bag, gently pressing the solids to extract all the juice. Discard the solids. You should have around 8 ounces of juice.
  • Prepare the mimosa by pouring 4 ounces of sparkling rosé into a wine glass, then adding 2 ounces of watermelon juice. If desired, mix in Meyer lemon juice or Limoncello. Stir gently to blend the flavors.
  • Garnish with a refreshing watermelon wedge before indulging in this delightful dish.
