Giant oatmeal cookies bursting with raisins, nuts, and chocolate, all gluten-free.
Ingredients:
  • 1 cup sugar
  • 1 cup firmly packed brown sugar
  • 1 cup peanut butter
  • 1/2 cup butter, softened
  • 4 1/2 cups quick-cooking rolled oats
  • 2 teaspoons baking soda
  • 1 (6-oz.) pkg. (1 cup) semisweet chocolate chips
  • 1 cup candy-coated chocolate pieces
  • 1 cup chopped peanuts
  • 1/2 cup raisins
Instructions:
  • Preheat the oven to 350°F. In a large bowl, cream together sugar, brown sugar, peanut butter, and butter until light and fluffy. Beat in eggs one at a time. Mix in oats and baking soda until well combined. Stir in chocolate chips, chocolate pieces, peanuts, and raisins.
  • Spoon dough onto ungreased cookie sheets, spacing 2 1/2 inches apart.
  • Bake at 350°F until light golden brown, for about 11 to 14 minutes. Let cool for 2 minutes, then transfer from cookie sheets.
