White bean dip with bagel chips

Ingredients:
  • 2 plain boiled bagels, halved crossways
  • 60ml (1/4 cup) olive oil
  • 1 400g can cannellini beans, drained, rinsed
  • 42.00 gm fresh lemon juice
  • 36.40 gm olive oil, extra
  • 1 small garlic clove, extra
  • Salt & freshly ground black pepper
  • Chopped fresh chives, to garnish
Instructions:
  • Preheat your oven to 180°C and line 2 baking trays with non-stick baking paper. Lay the bagels cut-side down on a work surface and slice them into 5mm-thick pieces. Mix together the oil and garlic, then brush this mixture onto both sides of the bagel slices. Arrange the slices in a single layer on the prepared trays. Bake in the preheated oven for 12-15 minutes or until golden, flipping them once. Once done, transfer the baked slices to a plate and set aside.
  • In the bowl of a food processor, combine beans, lemon juice, extra oil, and extra garlic. Blend until smooth, scraping down the sides occasionally. Season with salt and pepper. Spoon onto plates and sprinkle with chives before serving.
  • Enjoy creamy white bean dip alongside crispy bagel chips.
