Quick and savory Tuscan bean dip, blended effortlessly in a food processor.
Ingredients:
  • 2 tablespoons pine nuts
  • 2 teaspoons chopped fresh basil
  • 1 teaspoon chopped fresh oregano
  • 1 cup cooked Great Northern beans
  • 2 cloves garlic, cut in half
  • 1 teaspoon lime juice
  • 1 roma (plum) tomato, roughly chopped
  • sea salt to taste
  • black pepper to taste
  • 1 tablespoon olive oil
Instructions:
  • Combine pine nuts, basil, and oregano in a food processor and pulse a few times until nuts are finely ground. Add beans and garlic; process until smooth. Pour in lime juice, tomato, salt, and pepper; pulse until smooth. While the processor is running, gradually drizzle in the oil until well combined. If needed, add water, 1 tablespoon at a time, to reach desired consistency.
  • Chill for a minimum of 2 hours, or leave overnight to enhance the flavor before serving.
