White Chocolate Cheesecake Bars

Indulgent white chocolate cheesecake bars - a perfect combo of sweet, creamy bliss!
Ingredients:
  • 20 thin chocolate wafer cookies, crushed (1 1/4 cups)
  • 6 tablespoons butter or margarine, melted
  • 2 packages (8 oz each) cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 package (6 oz) white chocolate baking bars, chopped (1 cup)
  • 1 tablespoon Gold Medal™ all-purpose flour
  • Fresh raspberries and mint leaves, if desired
Instructions:
  • Preheat the oven to 350°F and generously grease an 8-inch square pan. Combine crushed cookies and butter in a small bowl, then firmly press this mixture into the bottom of the pan. Bake for 10 minutes, then allow it to cool completely for about 20 minutes before serving.
  • Preheat oven to 325°F. In a large bowl, use an electric mixer to beat cream cheese, sugar, and vanilla until light and fluffy. Add eggs one at a time until blended. In a small bowl, mix chopped white chocolate and flour, then fold into the cream cheese mixture. Spread batter over crust and bake.
  • Bake for 28 to 30 minutes until edges are firm but center slightly jiggles. Let it cool in the pan on a rack for about 1 hour, then refrigerate for 2 hours. Cut into 16 pieces and top with raspberries and mint before serving.
