Elevate white chocolate macadamia nut cookies with a hint of coffee.
Ingredients:
  • 1 1/4 cups all-purpose flour (160 g)
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter (1 stick, or 8 Tbsp, or 112g) at room temperature
  • 1/2 cup white sugar (90 g)
  • 1/2 cup dark brown sugar, packed (85 g)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon instant coffee granules or instant espresso powder
  • 1/2 cup chopped macadamia nuts (3 1/2 ounces, or 100 g)
  • 1/2 cup white chocolate chips
Instructions:
  • Preheat the oven to 350°F (175°C).
  • Combine the flour, salt, and baking powder in a bowl, whisking vigorously until well mixed. Set aside.
  • Prepare the cookie dough by creaming the butter until fluffy. Mix in both brown and white sugars until smooth. Incorporate the egg, followed by the vanilla extract and instant coffee, mixing until creamy. Add the dry ingredients in three parts, mixing well after each addition. Once fully combined, gently fold in the nuts and chocolate chips using a wooden spoon.
  • Spoon cookie dough onto greased baking sheet: Use a heaping tablespoon to spoon dough onto the baking sheet, ensuring each dollop is placed 2 inches apart to allow for proper spreading while baking.
  • Bake at 350°F (175°C) for 9 to 11 minutes until the edges are beautifully golden and the center is perfectly moist.
  • Remove the cookies from the oven and allow them to rest for 5 minutes before transferring them to a cooling rack to cool completely.
