Tropical white chocolate chip muffins with lime juice and coconut rum.
Ingredients:
  • 0.5 cup white sugar
  • 0.5 cup brown sugar, divided
  • 2 teaspoons baking powder
  • 0.25 teaspoon baking soda
  • 0.5 cup lime juice
  • 0.5 cup butter, melted
  • 0.25 cup coconut-flavored rum
  • 0.66666668653488 cup white chocolate chips
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and prepare your muffin tin by greasing it or lining each cup with paper liners.
  • In a medium bowl, mix together flour, white sugar, 1/4 cup brown sugar, baking powder, baking soda, and salt until combined.
  • In a small bowl, mix together lime juice, rich melted butter, eggs, and flavorful rum. Gradually incorporate the mixture into the flour until just moistened, then gently fold in premium white chocolate chips.
  • Transfer the batter into the muffin cups and generously sprinkle the remaining brown sugar on top.
  • Bake until a knife in the center comes out clean, around 25 minutes in the preheated oven.
