Creamy raspberry tart topped with luscious cream cheese and whipped cream - pure decadence!
Ingredients:
  • 20 creme-filled chocolate sandwich cookies, crushed (2 cups)
  • 1/4 cup butter or margarine, melted
  • 1 package (6 oz) white chocolate baking bars, chopped
  • 2 cups whipping cream
  • 1 teaspoon vanilla
  • 1 package (8 oz) cream cheese, softened
  • 1 package (10 oz) frozen raspberries in syrup, thawed
  • 2 teaspoons cornstarch
  • 1 cup fresh raspberries
Instructions:
  • - Preheat the oven to 375°F. - Combine crushed cookies and butter in a medium bowl. - Press the mixture onto the bottom and 1 inch up the side of an ungreased 9- or 10-inch springform pan. - Bake for 7 to 9 minutes or until set. - Allow it to cool completely, approximately 30 minutes.
  • In a 1-quart heavy saucepan, gently melt white baking bars with 1/2 cup of whipping cream over low heat, stirring often. Once chocolate is melted, stir in vanilla. Let cool to room temperature for about 15 minutes.
  • In a large bowl, use an electric mixer to blend cream cheese until smooth. Add white chocolate mixture and continue blending until creamy. Set aside.
  • In a chilled large bowl, whip 1 1/2 cups of whipping cream on high speed until stiff peaks form. Gently fold half of the whipped cream into the cream cheese mixture until combined. Then fold in the remaining whipped cream. Spoon the mixture into the crust and refrigerate for 3 to 4 hours until set.
  • Position a small strainer on top of a 1-quart saucepan. Empty the package of raspberries into the strainer. Using the back of a spoon, press the raspberries through the strainer to eliminate the seeds; discard the seeds. Mix cornstarch into the raspberry puree. Bring to a boil over medium heat. Allow it to cool completely, approximately 20 minutes.
  • Garnish the top edge of the tart with fresh raspberries, remove the pan side, cut into wedges, and place on dessert plates. Finish by drizzling raspberry sauce over each serving.
