Ingredients:
  • 2.25 cups cake flour
  • 1.5 cups white sugar
  • 3.5 teaspoons baking powder
  • 1 teaspoon salt
  • 0.5 cup shortening
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 4 egg whites
Instructions:
  • Preheat the oven to a cozy 350°F (175°C), then generously grease and flour your baking pan - whether it's a 9x13 inch rectangular pan or two 9 inch round pans.
  • Combine flour, sugar, baking powder, salt, shortening, milk, and vanilla in a large mixing bowl. Beat on high speed for 2 minutes, scraping the bowl occasionally.
  • In a large glass or metal mixing bowl, whip egg whites until they form stiff peaks. Gently fold in a third of the whites, then carefully fold in the rest until fully combined.
  • Transfer the batter into the appropriate pan. Bake a 9x13 inch cake for 35 to 40 minutes or 9-inch rounds for 30 to 35 minutes until a toothpick comes out clean.
