Silver White Cake with Chocolate Frosting (lighter recipe)

Indulge in a guilt-free treat with this light and delectable version of Silver White Cake - just as tender and delicious as the classic!
Ingredients:
  • 2 1/4 cups Gold Medal™ all-purpose flour
  • 1 2/3 cups sugar
  • 1/3 cup shortening
  • 1/3 cup unsweetened applesauce
  • 1 1/4 cups fat-free (skim) milk
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 teaspoons vanilla or almond extract
  • 5 egg whites
  • Chocolate Buttercream Frosting (lighter recipe)
Instructions:
  • Preheat oven to 350°F and generously grease and flour your baking pans - choose from a 13x9x2-inch rectangular pan, two 9x1 1/2-inch round pans, or three 8x1 1/2-inch round pans.
  • In a large bowl, use an electric mixer to beat all ingredients (except egg whites and Chocolate Buttercream Frosting) on low speed for 30 seconds, while scraping the bowl constantly. Then, switch to high speed and beat for 2 minutes, scraping the bowl occasionally.
  • Whip egg whites on high speed for 2 minutes, making sure to scrape the sides of the bowl. Transfer the mixture to the pan(s).
  • Bake the rectangle for 40 to 45 minutes, 9-inch rounds for 30 to 35 minutes, and 8-inch rounds for 23 to 28 minutes until a toothpick inserted in the center comes out clean and the cake springs back lightly when touched. Cool the rectangle in the pan on a wire rack. Cool the rounds for 10 minutes, then remove from the pans to a wire rack. Let the cakes cool completely, approximately 1 hour.
  • Cover the rectangle or layer cakes with delectable Chocolate Buttercream Frosting.
