Whiting stew with amaranth

Hearty and healthy fish stew perfect for a quick midweek meal.
Ingredients:
  • 18.20 gm olive oil
  • 1 brown onion, finely chopped
  • 1 red capsicum, thinly sliced
  • 3 garlic cloves, finely chopped
  • 375.00 ml amaranth (see notes)
  • 510.00 gm salt-reduced fish stock
  • 1 tsp dried oregano
  • 200g baby roma tomatoes
  • 600g whiting, skinned, cut into 4cm pieces
  • Oregano leaves, to serve (optional)
Instructions:
  • In a large saucepan over medium heat, sauté onion, capsicum, and garlic in oil, stirring occasionally, until tender, around 5 minutes.
  • Mix in the amaranth, pour in the stock, and sprinkle in the oregano. Bring to a boil, season to taste, cover, reduce heat to medium-low, and simmer for 10 minutes.
  • Stir in tomatoes and simmer for 10 minutes. Then add fish and cook for 3 minutes until white and cooked through. If desired, add a splash of boiling water for a creamier finish.
  • Garnish with fresh oregano leaves before serving.
