Nutritious whole grain pancakes packed with flavor from a mix of whole wheat flour, oats, cornmeal, and flaxseed.
Ingredients:
  • 1 cup whole wheat flour
  • 0.5 cup rolled oats
  • 0.25 cup cornmeal
  • 3 tablespoons flaxseed meal
  • 3 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 egg, beaten
  • 2 cups buttermilk
Instructions:
  • Combine the whole wheat flour, oats, cornmeal, flaxseed meal, brown sugar, baking powder, and baking soda in a large bowl. Add the buttermilk and egg, and mix until smooth.
  • Preheat a large skillet or griddle over medium heat and lightly coat with cooking spray. Spoon batter onto the griddle, cook until bubbles form and edges are dry. Flip and cook until browned. Repeat with remaining batter.
