Whole Grain Zucchini Bread

Delicious high-fiber recipe for a healthy digestive system, inspired by Strong Women™.
Ingredients:
  • 1 1/2 cups Gold Medal™ whole wheat flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • Pinch salt
  • 3/4 cup sugar
  • 1/4 cup canola oil
  • 1/4 cup orange juice
  • 2 tablespoons plain nonfat yogurt
  • 1 teaspoon vanilla extract
  • Grated zest of 1 orange
  • Grated zest of 1 lemon
  • 1 cup grated zucchini
Instructions:
  • Prepare your 9 x 5 inch loaf pan by greasing and coating it with a layer of sugar. Preheat your oven to 350° F.
  • In a bowl, sift together flour, baking soda, baking powder, cinnamon, and salt. In a separate bowl, beat eggs and sugar until well mixed and slightly thickened. Mix in oil, juice, yogurt, vanilla, and grated zests. Stir in the dry ingredients and zucchini until well combined.
  • Transfer the batter into the pan and bake until deep golden brown, approximately 50 minutes. Let it cool on a wire rack.
