Delicious whole wheat walnut muffins with a hint of spice, made healthier with skim milk.
Ingredients:
  • 1 cup unbleached all-purpose flour
  • 1 cup whole wheat flour
  • 0.5 cup white sugar
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 0.5 teaspoon ground nutmeg
  • 1 cup plain nonfat yogurt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare a 12-cup muffin tin by greasing it or lining with paper liners.
  • Combine unbleached and whole wheat flours, sugar, baking soda, baking powder, salt, and nutmeg in a large bowl. In a separate bowl, mix yogurt, milk, and vanilla. Combine wet ingredients with dry ingredients until just blended. Gently fold in walnuts. Spoon batter into muffin cups and bake.
  • Bake in the preheated oven for 18 to 20 minutes until the top springs back when lightly touched. Cool in the muffin pan on a wire rack.
