Fluffy whole wheat pancakes made with buttermilk and chocolate chips.
Ingredients:
  • 1 cup buttermilk
  • 0.5 cup whole wheat flour
  • 0.5 cup whole wheat pastry flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 cup semisweet chocolate chips
  • cooking spray
Instructions:
  • In a bowl, whisk together buttermilk, egg, and vegetable oil. Add flours, baking powder, baking soda, and salt, and stir until just combined. Gently fold in chocolate chips.
  • Prepare a skillet with a light coating of cooking spray over medium heat. Pour 1/4 cup of batter onto the skillet at a time. Cook until bubbles form and edges are dry, then flip and cook until golden brown, approximately 2 minutes per side.
