Light and crisp waffles with a nutty flavor made with whole wheat pastry flour and oat flour.
Ingredients:
  • 0.5 cup whole wheat pastry flour
  • 0.5 cup all-purpose flour
  • 1 cup oat flour
  • 1 tablespoon baking powder
  • 2 eggs, separated
  • 1.5 cups milk
  • 2 tablespoons canola oil
Instructions:
  • Preheat the waffle maker as per the manufacturer's instructions.
  • In a mixing bowl, combine whole wheat flour, all-purpose flour, oat flour, sugar, baking powder, and salt. In another bowl, whisk together egg yolks, milk, canola oil, and vanilla extract. Using an electric mixer, beat egg whites in a non-plastic bowl until soft peaks form in about 1 to 2 minutes.
  • Create a crater in the dry ingredients and pour in the milk mixture. Stir the batter until it's silky. Carefully incorporate the fluffy egg whites into the batter, maintaining their airy texture. Allow the batter to rest until it thickens slightly, approximately 5 minutes.
  • Pour the batter onto the waffle maker as recommended by the manufacturer. Close the lid and bake until the waffle is golden brown and crispy, which will take about 2 to 4 minutes.
