Indulge in moist whole wheat oatmeal muffins, sweetened with ripe bananas for a healthier treat.
Ingredients:
  • 1 cup rolled oats
  • 0.75 cup whole wheat flour
  • 0.75 cup all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground cinnamon, or more to taste
  • 0.25 teaspoon ground nutmeg, or more to taste
  • 0.75 cup milk
  • 0.33333334326744 cup vegetable oil
  • 0.25 cup brown sugar, packed
  • 0.5 teaspoon vanilla extract
  • 3 extra-ripe bananas, mashed
  • 1 cup walnuts, crushed using a rolling pin
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and dress up a muffin tin with paper liners.
  • In a medium bowl, mix together oats, whole wheat flour, all-purpose flour, white sugar, baking powder, baking soda, salt, cinnamon, and nutmeg; set aside.
  • In a large bowl, gently whisk eggs. Incorporate milk, oil, brown sugar, and vanilla extract. Integrate bananas and combine thoroughly.
  • Pour half of the flour mixture into the egg mixture and mix until well combined. Then add the rest of the flour mixture and mix. Gently fold in the nuts into the batter.
  • Fill the prepared muffin cups with batter, leaving a 1/4 inch space at the top of each.
  • Bake in the preheated oven for 18 to 20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
