Ingredients:
  • 1.5 cups whole wheat flour
  • 0.66666668653488 cup brown sugar
  • 0.5 cup flaxseed meal
  • 0.33333334326744 cup rolled oats
  • 2 tablespoons white sugar
  • 0.5 teaspoon baking soda
  • 0.125 teaspoon salt
  • 2 eggs
  • 0.33333334326744 cup buttermilk
  • 1 tablespoon buttermilk
  • 3 bananas, mashed
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x5-inch loaf pan.
  • Combine whole wheat flour, brown sugar, flaxseed meal, oats, white sugar, baking powder, baking soda, and salt in a large bowl.
  • In a separate bowl, mix together eggs, butter, 1/3 cup plus 1 tablespoon of buttermilk, and vanilla extract. Stir in the flour mixture, then fold in the bananas until the batter is thoroughly combined. Transfer the mixture into the loaf pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, for 50 minutes to 1 hour. Let it cool in the pan for 5 minutes, then invert onto a wire rack to cool for about 25 minutes.
