Delicious banana scones, versatile for any meal or snack, can be enjoyed freshly baked or saved for later.
Ingredients:
  • 3 cups whole wheat flour
  • 1 cup all-purpose flour
  • 0.66666668653488 cup brown sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1 cup unsalted butter, cubed
  • 2 medium bananas, cut into chunks
  • 0.5 cup milk
  • 2 large eggs
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and generously grease a baking sheet.
  • Combine both flours, brown sugar, baking powder, and baking soda in a large bowl. Blend in butter using a pastry blender until the mixture is crumbly. Incorporate bananas with the pastry blender. Gently mix in milk and eggs until just combined, forming a slightly sticky dough that comes together into a ball.
  • Separate dough into two equal portions. Shape each into a round mound on one side of the baking sheet, then gently flatten into a 3/4- to 1-inch circle. Use a sharp knife to cut each circle into 8 wedges, about 1/3-inch deep.
  • Bake in the oven until beautifully golden, about 15 to 17 minutes. Remove and gently break scones along the score lines.
