Delicious and refreshing pasta salad with carrots, asparagus, tomatoes, and green onions, perfect for quick meals or meal prep.
Ingredients:
  • 1 (12 ounce) box whole wheat rotini pasta
  • 0.25 cup apple cider vinegar
  • 0.25 cup crumbled feta cheese, or to taste
  • 6 leaves fresh basil, chopped
  • salt and ground black pepper to taste
  • 1 bunch asparagus, trimmed and chopped
  • 3 tomatoes, chopped
  • 1 bunch green onions
  • 4 cloves garlic, minced
Instructions:
  • Bring a large pot of salted water to a boil. Cook the rotini until al dente, about 8 minutes; then drain.
  • Chill the pasta by rinsing it with cold water until cold, then drain thoroughly.
  • Once the pasta is cooking, combine apple cider vinegar and olive oil in a large bowl, whisking until fully blended. Mix in feta cheese, basil, salt, and black pepper to create the vinaigrette.
  • Gently mix the asparagus, tomatoes, carrots, green onions, and garlic with the vinaigrette until well coated.
  • Combine the cooled pasta with the vegetable mixture; toss until fully incorporated.
