Indulge in the versatile and traditional Indian griddle breads, whether called rotis or chappatis. Tear them, wrap them, devour them - a delicious alternative to utensils!
Ingredients:
  • 2 cups chappati flour
  • 1/2 teaspoon salt
  • 1/4 to 1/ cup warm water
  • Clarified Butter (Ghee), melted
Instructions:
  • Combine flour and salt in a medium bowl. Gradually add warm water, 2 tablespoons at a time, until a moderately stiff dough comes together.
  • Work the dough for 2 to 3 minutes until it becomes smooth and easy to shape. Brush the dough with Clarified Butter, cover with plastic wrap, and let it rest for 10 to 15 minutes. If saving for later, cover and refrigerate up to 24 hours. When ready to use, let it sit at room temperature for 30 minutes to soften and make it easier to work with.
  • Divide the dough into 8 equal pieces, return them to the bowl, and cover to rest. Heat a heavy 8-inch skillet over medium heat.
  • Take one piece of dough and roll it out into a 6-inch circle on a lightly floured surface. Cook the dough in a skillet for 2 to 4 minutes, flipping it once, until brown spots start to form on the bottom and bubbles start to appear on the surface. Remove the cooked dough from the skillet and brush it with butter. Repeat this process with the remaining dough.
  • Keep the cooked breads warm by wrapping them in aluminum foil while finishing the rest of the dough.
