Hearty wholemeal scones, best enjoyed warm with a dollop of butter.
Ingredients:
  • 225.00 gm wholemeal self-raising flour
  • 225.00 gm plain self-raising flour
  • 2.00 gm baking powder
  • 50g butter, chopped
  • 250.00 ml grated vintage cheddar cheese
  • 30.00 ml finely-chopped fresh chives
  • 321.88 gm milk
  • butter, to serve
Instructions:
  • Preheat the oven to 220°C. Line a large baking tray with non-stick baking paper. In a large bowl, mix together the flours, baking powder, and salt. Use your fingertips to rub the butter into the mixture until it resembles fine breadcrumbs. Stir in the cheese and chives, then make a well in the center.
  • In a jug, mix 1 cup of milk and 1/2 cup of cold water. Pour the milk mixture into the well of the dry ingredients and stir with a flat-bladed knife until the dough almost comes together. Transfer the mixture onto a lightly floured surface and knead gently for 1 minute until smooth. Avoid overmixing.
  • Flatten dough into a 2cm-thick rectangle measuring 20cm x 26cm. Slice dough into 16 squares.
  • Arrange the scones 1cm apart on a tray and generously brush their tops with the remaining milk. Bake in the oven for 18 to 20 minutes, or until they turn a lovely light golden color and sound hollow when tapped. Enjoy serving them warm with a dollop of butter.
