Indulgent chocolate cake cookies filled with fluffy vanilla - ideal for festive treats!
Ingredients:
  • 1 cup white sugar
  • 0.5 cup shortening
  • 2 eggs, separated, divided
  • 2 cups all-purpose flour
  • 5 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups confectioners' sugar
  • 0.75 cup shortening
  • 1 pinch salt
Instructions:
  • Preheat your oven to 350 degrees F (180 degrees C) and generously grease your cookie sheets.
  • In a large bowl, use an electric mixer to beat together sugar, shortening, and egg yolks until light and fluffy to make the cookies.
  • Combine and sift flour, cocoa, baking powder, baking soda, and salt in a separate bowl. Add to shortening mixture in batches along with milk, alternating each addition, and beat until smooth. Mix in vanilla. Spoon dough onto baking sheets, spacing 2 inches apart.
  • Simply bake in the preheated oven for 10 to 15 minutes, then cool on a wire rack until completely room temperature.
  • Prepare the filling by mixing confectioners' sugar, shortening, reserved egg whites, and salt in a large bowl with an electric mixer until fluffy. Add vanilla and mix well.
  • Select two equally sized cookies. Spread a generous amount of filling on one cookie's flat side, then place the other cookie on top. Repeat this process with the rest of the cookies and frosting.
