Affordable and delightful rice side dish.
Ingredients:
  • 250.00 ml wild rice blend (with mushrooms)
  • 1/2 red onion, halved, thinly sliced
  • 125.00 ml semi-dried tomatoes, drained, halved
  • 187.50 ml pitted kalamata olives
  • 100g baby rocket
  • 40.00 ml red wine vinegar
  • 36.40 gm extra-virgin olive oil
Instructions:
  • In a saucepan, combine rice with 2 cups of cold water. Bring to a boil while covered, then simmer on low heat for 12 to 14 minutes until liquid is absorbed. Let it sit for 10 minutes, then fluff the rice with a fork to separate grains.
  • Mix rice, onion, tomato, olives, and rocket in a bowl. Combine vinegar, oil, and garlic in a screw-top jar. Season with salt and pepper. Close the lid tightly and shake well to blend everything together.
  • Drizzle the tangy vinegar mixture over the fluffy rice blend and mix well. Time to enjoy!
