Elevate your roasted chicken with a flavorful rice pilaf stuffing, easily customizable with different nuts, mushrooms, and herbs.
Ingredients:
  • 1 teaspoon olive oil
  • 0.5 cup onion, chopped
  • 0.5 cup chopped fresh mushrooms
  • 1 cup chopped cashews
  • 1 tablespoon chopped fresh rosemary
  • 1.75 cups chicken stock
  • 1 cup long grain and wild rice mix
Instructions:
  • - Heat oil in a skillet until shimmering. Cook onions until soft and see-through. Add mushrooms and saute until tender. Sprinkle in rosemary and cook for a minute. Toss in cashews and cook for another minute. Transfer to a saucepan.
  • Combine chicken stock and rice, let it simmer until the liquid is absorbed, then let it rest for 5 minutes before stuffing into the small roasting chicken.
