Transform a cake mix into a delightful dessert by adding sweet applesauce, dates, cranberries for a burst of flavor, and crunchy pecans.
Ingredients:
  • 1/2 cup chopped dates
  • 1/2 cup sweetened dried cranberries
  • 1/2 cup chopped pecans
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1 teaspoon pumpkin pie spice
  • 2 tablespoons water
  • 1/3 cup vegetable oil
  • 1 cup chunky applesauce
  • 1/3 cup butter or margarine, melted
  • 3/4 cup packed brown sugar
  • 3/4 cup chopped pecans
  • 3 tablespoons milk
Instructions:
  • Preheat the oven to 375°F (350°F for dark or nonstick pan) and grease or spray the bottom of a 13x9-inch pan. In a medium bowl, combine dates, cranberries, and 1/2 cup pecans with 1/4 cup of cake mix. In a larger bowl, beat the rest of the cake mix, pumpkin pie spice, water, oil, eggs, and applesauce with an electric mixer on low speed for 30 seconds, then on medium speed for 2 minutes. Fold in the date mixture and spread the batter in the prepared pan.
  • Bake for about 35 to 40 minutes until a toothpick inserted in the center comes out clean. While the cake bakes, combine butter, brown sugar, 3/4 cup pecans, and milk in a small bowl. Spread this mixture over the warm cake when it's done.
  • Preheat the oven to broil. Broil the cake 4 inches from the heat for about 1 minute until bubbly (watch closely to avoid burning). Allow the cake to cool completely for about 1 1/2 hours, then store it loosely covered.
