"Vibrant winter fruit pasta salad with celery and honey-lime poppy seed dressing."
Ingredients:
  • 1 cup mini farfalle pasta
  • 2 mandarin oranges, peeled and segmented
  • 2 kiwi fruits - peeled, sliced, and quartered
  • 1 medium apple, diced
  • 1 medium Bartlett pear, cored and diced
  • 0.25 cup sweetened dried cranberries (such as Ocean Spray® Craisins®)
  • 2 tablespoons pomegranate arils
  • 2 tablespoons minced celery
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon poppy seeds
Instructions:
  • 1. Boil a large pot of lightly salted water. 2. Cook farfalle until al dente, stirring occasionally, for about 7 minutes. 3. Rinse the pasta with cold water and drain thoroughly.
  • Combine a vibrant mix of mandarin orange sections, kiwi, apple, pear, dried cranberries, pomegranate arils, and celery in a spacious bowl.
  • Gently fold the pasta into the fruit salad until fully incorporated.
  • Combine lime juice, honey, olive oil, and poppy seeds in a small bowl, stirring to blend. Pour the mixture over the pasta salad and mix well. Chill in the refrigerator for 30 minutes to let the flavors meld.
