Crunchy salad with toasted Fiber One® cereal for extra flavor and texture.
Ingredients:
  • 4 oz crumbled feta cheese
  • 2 tablespoons butter
  • 1/2 cup Fiber One™ original cereal
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup chopped walnuts
  • 4 cups chopped romaine lettuce
  • 4 cups arugula
  • 1 cup peeled grapefruit sections
  • 1/2 cup pomegranate seeds
  • 1/4 cup poppy seed dressing
  • 1/4 cup olive oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon sugar
Instructions:
  • Heat butter in a 10-inch skillet over medium-high heat. Process cereal in a food processor until coarse. Stir in cereal, salt, and pepper, cook for 5 minutes, stirring frequently. Add walnuts and cook for an additional 3 to 4 minutes until cereal is dark brown and walnuts are lightly toasted. Transfer to paper towels to cool.
  • Combine lettuce, arugula, grapefruit sections, feta cheese, and pomegranate seeds in a large bowl. In a small bowl, whisk together poppy seed dressing, olive oil, vinegar, and sugar until smooth. Drizzle the dressing over the salad and toss to coat. Sprinkle cereal mixture on top right before serving.
