Festive holiday salad perfect for meals at home or sharing with family gatherings.
Ingredients:
  • 0.5 cup lemon juice
  • 2 teaspoons diced onion
  • 1 teaspoon Dijon-style prepared mustard
  • 0.66666668653488 cup vegetable oil
  • 1 tablespoon poppy seeds
  • 1 head romaine lettuce, torn into bite-size pieces
  • 4 ounces shredded Swiss cheese
  • 1 cup cashews
  • 0.25 cup dried cranberries
  • 1 apple - peeled, cored and diced
  • 1 pear - peeled, cored and sliced
Instructions:
  • Blend sugar, lemon juice, onion, mustard, and salt in a blender or food processor until smooth. While still blending, slowly pour in the oil until the mixture thickens. Finally, add poppy seeds and pulse briefly to combine.
  • Combine romaine lettuce, shredded Swiss cheese, cashews, dried cranberries, apple, and pear in a bowl. Drizzle dressing over the salad before serving, toss to evenly coat, and enjoy.
