Winter Greens with Pomegranate-Champagne Vinaigrette

Vibrant winter salad with pomegranate and champagne vinaigrette.
Ingredients:
  • 1 (10-oz.) pkg. mixed salad greens
  • 1 pomegranate
  • 2 tablespoons champagne wine vinegar
  • 1 1/2 teaspoons Dijon mustard
  • 6 tablespoons oil
  • 1/8 teaspoon salt
  • Dash freshly ground black pepper
Instructions:
  • Add fresh vibrant greens to a spacious salad bowl. Carefully remove the peel and seeds from the pomegranate, keeping the seeds for later use.
  • Whisk together vinegar and mustard in a small bowl until blended. Gradually add oil while whisking until thickened. Season with salt and pepper, then gently mix in half of the pomegranate seeds.
  • When you're ready to impress, drizzle dressing on the greens and toss gently to coat. Sprinkle the rest of the pomegranate seeds over the vibrant salad.
