Crunchy wonton appetizers with irresistible ginger dipping sauce for endless snacking delight.
Ingredients:
  • 80ml (1/3 cup) cold water
  • 42.00 gm soy sauce
  • 5cm piece fresh ginger, peeled, finely grated
  • 20.00 gm caster sugar
  • 12 fresh flour wonton wrappers
  • 1 medium (about 150g) carrot, peeled, cut into 10cm batons
  • 4 green shallots, ends trimmed, cut into 10cm lengths
  • 8 broccolini stalks, cut into 10cm lengths, halved lengthways (florets reserved for main meal)
  • 125ml (1/2 cup) vegetable oil
Instructions:
  • Mix together refreshing water, savory soy sauce, aromatic ginger, and a hint of sweetness from sugar in a small bowl. Transfer the exquisite dressing into a dipping bowl and set it aside for later use.
  • Lay out the wonton wrappers on a tidy surface. Add a small amount of carrot, shallot, and broccolini along one side of each wrapper. Moisten the opposite edge lightly with water and roll up to seal the filling inside.
  • Heat the oil in a wok until it reaches 180°C (you'll know it's ready when a bread cube turns golden brown in 15 seconds). Deep fry half of the vegetable rolls for 2 minutes until golden brown and cooked through. Drain on paper towel and repeat with the rest of the rolls.
  • Present the rolls elegantly on serving plates and accompany them with the delicious dipping sauce.
