Savory tart featuring fresh wood sorrel leaves with a creamy Gruyere and Parmesan filling. Easy and delicious.
Ingredients:
  • 2 tablespoons butter
  • 2 shallots, thinly sliced
  • 1 large onion, thinly sliced
  • 0.25 cup dry white wine
  • 3 tablespoons all-purpose flour
  • 1 cup fresh wood sorrel leaves, flowers and pods only
  • 4 eggs
  • 2 cups heavy cream
  • 2 teaspoons ground black pepper
  • 1 cup grated Gruyere cheese
  • 0.5 cup grated Parmesan cheese
  • 1 (9 inch) pre-baked pie crust
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • In a skillet, melt butter over gentle heat. Sauté shallots and onion until soft and translucent, approximately 5 minutes. Stir in garlic and cook for 1 to 2 minutes. Season with salt to taste.
  • Turn up the heat to medium. Pour in white wine and let it cook until evaporated. Mix in the flour, then add the sorrel. Stir continuously for 1 minute. Take the skillet off the heat and allow it to cool.
  • As the sorrel mixture cools, combine eggs, heavy cream, and black pepper in a large bowl, whisking until smooth.
  • Mix together the sorrel mixture, egg mixture, half of the Gruyere cheese, and half of the Parmesan cheese. Pour the mixture into the pie crust. Sprinkle the remaining Gruyere and Parmesan cheese on top.
  • Bake in the oven until a knife in the center comes out clean and the tart is firm, approximately 1 hour.
