Wood-roasted garlic with soft cheese and bread

Indulge in irresistible cheesy garlic bread to kick off your meal.
Ingredients:
  • 4 garlic bulbs
  • 4 thyme sprigs
  • 80ml olive oil
  • 250g soft fresh goat's cheese or ricotta
  • 1 loaf wood-fired bread, thickly sliced
Instructions:
  • Trim the tops off each garlic bulb with a sharp knife, leaving the cloves exposed but keeping the papery skin intact.
  • Prepare 4 large squares of foil and set a garlic bulb and a sprig of thyme on each one. Drizzle them with 1 tablespoon of oil, season with salt and pepper, and wrap them tightly. Roast over fire for 30 minutes or bake in a preheated 180°C oven for 35 minutes on a baking tray.
  • Peel garlic, squeeze out soft cloves, mash, spread on bread, top with cheese, season with pepper, drizzle olive oil, and serve hot.
